Cookie dough bites are balls of cookie dough that require no baking! Made with no raw eggs and no raw flour, these cookie dough balls are secretly healthy! 


Is there anything as good as raw cookie dough?

I think not. There are a plethora of ways to enjoy it. You can make them into bars, fold it through ice cream, or even give it a healthy spin, by making protein bars with it. The best way, though, is to enjoy them as bite sized balls.

Ingredients needed

You will love the simple ingredient list to make these no bake cookie dough bites. If you’ve ever made one of my healthy desserts before, you probably already have everything on hand. Here is what you’ll need: 

  • Almond flour. I used blanched almond flour. Regular almond flour works, but it will be darker in color. 
  • Maple Syrup. Adds sweetness and keep these super fudgy. 
  • Coconut Oil. Coconut oil helps hold the cookie dough bites together. 
  • Chocolate Chips of choice. 

How to make cookie dough bites

Start by adding the coconut oil and maple syrup to a microwave-safe bowl. Microwave for 2o seconds until the coconut oil has melted and whisk together.

Next, add the almond flour and mix until a thick dough remains. Using a rubber spatula, fold through the chocolate chips.

Now, using a cookie scoop or hands, form 2o-30 small balls of dough and place them on a lined plate. Refrigerate for at least 30 minutes until they have firmed up. 



INGREDIENTS

  • 1/2 cup coconut oil
  • 1/2 cup maple syrup
  • 3 cups almond flour
  • 1-2 cups chocolate chips

INSTRUCTIONS

  1. Line a plate with parchment paper and set aside.
  2. In a microwave-safe bowl or stovetop, add your coconut oil with maple syrup and heat until melted. Whisk together until combined.
  3. Add your almond flour and mix very well, until a thick, crumbly texture remains. If the batter is too thin, add a little extra almond flour. Fold your chocolate chips.
  4. Using your hands or a cookie scoop, form 20-30 balls of cookie dough. Place each ball on the lined plate and refrigerate until firm.

NOTES

To store: Healthy No Bake Cookie Dough Bites can keep at room temperature, for up to 7 days. Cookie dough balls are best stored in the fridge, in a sealed container, for up to 2 weeks.

To freeze: Cookie Dough Bites are freezer friendly and can be stored in the freezer for up to 6 months.
